THE CHICKPEAS
This stuff is like a staple in our houshold with variations that cross loads of cultural boundaries... sound technical mental??
Well this foxy number is borne out of a lack of lemmoes
(=lemonade, lemons, anything lemon)
or lemon juice as non-aussies say..
So, hmmmm how to substitute that crucial element in your usual chick pea dip,
hmmmmm ...ahuh! a massive brainwave strikes like thunder!
THE CHICKPEAS
240g of cooked chickpeas
8 inches of thin lemongrass stalk, freshly picked
pinch of salt
1 clove of garlic
1/2 -3/4 cup olive oil
modest handful of parsley
pour 1/2 cup of oil in a bowl and throw in the herbs, salt and garlic. Blend to a frothy oily mess. Add more oil if your stab blender needs it.
add a few chickpeas at a time until the mix gets thicker- soupy,
then throw in whole ones, about half- half, too if they're cooked well and tender, fudgy.
if you give it a go, let us know how you like it. It has lovely green glittery bits through it and because its so potently perfumed, its great for parties ie. getting value for money..
BUY OLIVE OIL IN BULK, COOK WITH IT AS LITTLE AS POSSIBLE AS IT BREAKS THE CHEMICAL BONDS!
(rub the discarded lemongrass on your neck or wrists for perfume!!)
