hello again, since harry is one of our biggest fans we thought this post could be for him.
Simple and quick pasta for Harry
IMPORTANT- MOST OF THESE ARE FROM OUR GARDEN -FRESH IS BEST
1 small garlic clove
3-4 leaves of chard/ spinach (young and tender)
4-5-6 small tomatoes
2 handfuls of spaghetti
3 cm chunk of leek roughly hacked
5-6 tbs of olive oil
tsp of salt
heaped tsp of just ground pepper corns
handful of purple and green basil
So, preheat oven to full blast or very hot
Put your pasta water on to boil
Rub bottom of baking dish with the garlic (try to get as much as possible out of the sucker)
And place salt, tomatoes, pepper, leek and olive oil. MIX WELL and spread.
Place the mixture in your oven
Boil pasta to your taste ( i dont care for al dente)
About 10 minutes and the the tomatoes and pasta are done PERFECT
Yet, drain the pasta, add the torn up silverbeet/spinach to the sizzling tomato pan.
Stir to soften.
Add the pasta in and stir it gently..the tomatoes will break down and gety all guzzy.
Place the basil torn and sprinkled between fingers.
As Rick Stein says- "simplicity is the sign of perfection....serve on a shaded terrace"
