potato bake - unusual

hey, this ones a bit weird but its quite stunning all the same..
7 regular potatoes - starchy/waxy is great, but cheap floury ones work too.
handful of shitake mushrooms dried
1/2- 3/4 cup water
half cup of soy milk
1 tsp of vanilla essence
1 clove of garlic sliced or minced into baking tray
1/2 tsp of cinnamon
4 tbs of olive oil
1 tbsp sea salt
wash and slice potatoes thinly, don't wash after you slice, you want to keep the starch
in tray; place oil, cinnamon, salt, garlic and vanilla essence.
place potatoes in layers in tray.
chuck the shitakes and water in a little bowl or mug and microwave for the water to boil.
just let it sit while you continue with the potato placing biz.
Once finished, blitz the swollen mushroom and water and tip in the tray
tip in the soymilk too.
bake in moderate oven for about an hour, foil the top if you need- if it's burning.
serve with a liberal amount of toasted poppy seeds.
great w a salad, and wine, bread etc..
