Dylan and I are students in Adelaide South Australia and we've come up with a few recipes that suit our budget. Her's our first recipe!!
Potato Bake (serves 6 as a side dish)
1 cup of loosely packed roasted silverside chopped
¼ tsp dried rosemary
¼ tsp dried thyme
250g cream cheese
1/3 cup milk
2 tbs whipped cream
1 tsp Butter
1 tsp flour
1 tsp fresh parsley chopped fine
1 tsp Pepper
2 tsp salt (Potato masks it well!)
¼ tsp Paprika
6 or 7 potatoes sliced elegantly
1 garlic clove sliced
METHOD
Boil the potatoes until they are nearly cooked
Place cream cheese, milk, flour, pepper, whipped cream and half the salt in a bowl. Mix well (this may take a little while.)
Sprinkle garlic and roast beef over base of baking dish
Spread cream cheese mixture on top of garlic and roast beef
Sprinkle the parsley, paprika and the other tsp of salt on top of cheese mix
When the potatoes are boiled sufficiently, drain and throw into the baking tray.
Combine all ingredients gently, coating all potato pieces with the mixture. (Try not to break down the potato slices)
Dot the surface with butter, sprinkle the cheese, thyme and rosemary. Submerge the herbs to permeate through the bake with the heat of the potatoes.
Given that the potatoes are hot already and nearly cooked, heat and crisp in a moderate fan-forced oven for ten to fifteen minutes.
This is great served cold.
