bbq creamy cauliflower and potato

This is so great for a bbq as a side dish (meat eaters and animal friendly people alike). I made it in the oven but you can cook it on the bbq by foiling it and mixing sporadically. Measurements and times are loose so you can adapt to feed your family or feed yourself on your lonesome. There is a little prep involved..a few hours but if your marinating anyway it is easy to fit in.

Ratio of potato to cauliflower is 1 1/2 potatoes to 1/3 cauliflower.

the leftover roast potatoes (my roommate made these so well and filled me in- they were the best Ive ever had!)

3 potatoes in gorgeous thick 1.3 cm slices (haha just kidding- thick though)
1/2 onion chopped
2 tablespoons of tomato paste
1 slice dried shitake mushroom.
Olive oil
Water to cover potatoes
sea salt

Preheat oven to 180 degrees fan forced with top grill bars on.

Cook onion in a little olive oil in microwave, add tomato paste, mushroom and water.
Blend mushroom with electric whizzer
add sliced potatoes.
Par cook the potatoes- so they are still firm.
Drain and watch the steam go up up and away (this makes them crispy when roasted!!)
In oven tray, place potato slices and only coat with oil..sprinkle as much salt as you like
Place tray in the middle to top of oven and Bake until cooked through and golden brown.

Let cool. Roommate ate some, so there was probably about 1-1/2 potatoes left for the bake!

Cauliflower and Sauce

Reheat oven to 180- fanforced with top grill bars on.

1/3 cauliflower in florette chinks not too big (break the larger ones in two)

place over the cooled potatoes in tray spread out evenly.

SAUCE for this amount of cauliflower and potato *add more if larger batches -math time!
2 tbs of flour
4 tbs of olive oil
1 cup or more of soymilk (depends on your flour's absorption)
sea salt
1/4 tsp cinnamon powder (again- freshly bought please!)

heat olive oil up quite high,
mix in flour till spread and golden/bubbling,
add 1 cup of milk and some salt --keep mixing. Sauce will thicken quite quickly .
The consistency is supposed to be like thin custard, coating your spoon so add milk accordingly.
mix in cinnamon
pour over cauliflower and potatoes in tray. Dont mix please.


Place tray in oven, surprisingly in the middle to top of oven.
During cooking, mix a few times, test stalks and add olive oil to coat once during cooking.

The cauliflowers get a little brown, the sauce is minimal so its fresh and bbq tasting.

This is tops..with steak and/or salad (I like chopped cucumber with a white bean and garlic dressing) YUMMMMM!

But those sorta recipes are for another day.. Have fun with this!!
