pea and tamarind soup

this is awesome for an everynight meal- speccy for a starter aswell


ps.. isnt our vintage pot delightful?




1/4 cup parsnip chopped
2 clove of garlic sliced
handful of green beans sliced
1/3 cup of dries split green peas
1/2 cup of chopped sweet potato
2 handfuls of chinese cabbage sliced
1 tsp of tamarind sauce/paste
125g of FIRM organic tofu
1 tsp of sea salt
2 tbsp of good smoky soy sauce
300ml of veggie stock
small handful of parsely chopped
2 tsp of olive oil



METHOD

heat olive oil- add garlic, parsnip, sweet potato and saute for a few minutes

add split peas, tofu and stock

bring to the boil, add tamarind and beans turn down to simmer


cook soup until split peas are almost cooked (they will have a small amount of pearl on the inside)

turn off heat add cabbage and parsely then serve.

GDAY MATE!!!!!!
this is a bit of alright- its very rich and has toasted nuts on top..its got a very woody flavour.


Best of all its very cheap.




1 very large eggplant/aubergine

1/4 cup of sea salt

newspaper- its better than those terrible bleached hand towel rolls

2 cups of chopped button mushrooms

270 ml of coconut cream (PURE- NO additives whatsoever)

1 tbs of curry powder (PURE SPICES/HERBS- NO additives whatsoever)

Brown rice cooked according to packet

3/4 cup of grilled peanuts/your fave nuts till golden -salt them if desired

handful of parsley with a little coriander mixed in. (from our garden- come and get it!)

1 tbs of dried chilli flakes


METHODS

EGGPLANT / AUBERGINE ---

cube the eggplant/aubergine, you can leave the skin on if you like for more fibre and nutrients..

coat the eggplant cubes with your salt

place in colander for an hour to bleed the pieces of bitterness..

rinse the eggplant and squeeze dry

place on newspaper to absorb the excess fluid..try to get them as dry as possible


CURRY---

start with a hot pan

tip in 1/2 the curry powder, a table spoon of the coconut milk and the eggplant.

Toast this off, stirring vigorously until the pure coconut cream begins to brown on bottom of pan

tip in a little more cream and stir, once this lot is smelling toasty add the rest of the cream

add the mushrooms, put lid on and turn heat right down. (15-20 minutes cooking time)

add your herbs, chilli and other half of curry powder- stir through and keep warm

cook your rice, grill your nuts

low calorie tasty greens

hellooooo! Do you guys love the Mighty Boosh? We love that show!

Well anyway, this is a simple low calorie salad/ side dish as you can see in the NEON pic!





handful of fresh green beans --topped and tailed

1/2 little block of frozen spinach (this stuff is so good)

2 cloves of garlic sliced/chopped fine

1 cup of frozen broccoli florets

2 tsp freshly crushed pepper

1 tbs lemon juice

3 tsp of oil


METHOD

fry off garlic and beans at same time in the heated oil

add other veggies (spinach and broccoli) then put the lid on.

cook till soft but still firm-ish (maybe 3 minutes)

stir in lemon juice and pepper

serve hot or cold



you can use fresh veggies if you like but I'm not entirely sold on them over frozen veggies.....blablabla...YAWN

this is so simple and delicious when eaten at room temperature- I really think you should eat sweeties at room temperature...

bbq creamy cauliflower and potato

This is so great for a bbq as a side dish (meat eaters and animal friendly people alike). I made it in the oven but you can cook it on the bbq by foiling it and mixing sporadically. Measurements and times are loose so you can adapt to feed your family or feed yourself on your lonesome. There is a little prep involved..a few hours but if your marinating anyway it is easy to fit in.

Ratio of potato to cauliflower is 1 1/2 potatoes to 1/3 cauliflower.

7 regular potatoes - starchy/waxy is great, but cheap floury ones work too

Hey guys, my room mate when I was at uni, he gave me this recipe, which is the most vegan recipe he had..see he used to cook cow's stomach an other such traditional things which were a little bit odd. But have no fear. This is fabulous!!
